Rabbit Squirrel and Sausage Gumbo

Ingredients

1 rabbit cut up

2 squirrels cut up

6 slices bacon

2 cups flour

1 1/4 cup oil

4 cups chopped onions

1 cup chopped green pepper

1 cup chopped celery

4 cloves minced garlic

4 quarts chicken or beef stock

1 can (10 oz) tomatoes

One pound of diced smoked sausage

2 cups smoked ham diced

1 teaspoon salt, 2 teaspoon black pepper, 1/2 to 1 to 1/2 teaspoons cayenne pepper

NOTE: Seasonings are to taste. Start on the low side and add to taste.

2 cups chopped green onions (or regular onions diced. If you have to minced dried onions can work.)

1 1/2 teaspoon oregano

1/2 teaspoon dried rosemary

2 to 3 1/2 tablespoons Tabasco (Depends on your tolerance for spicy)

Preparation:

In a cast iron dutch oven brown the bacon and set to the side.

Brown the squirrel and rabbit in the bacon fat.

Pour off bacon fat and scrape pot to get scrapings set to the side for later use.

Roux

On high heat, place your pot on the burner and put in the oil and flour. Stir until mixed well. When it starts to bubble stir constantly for 5 minutes then turn your heat to down to medium high. Keep stirring.

Mix will start to darken keep stirring making sure to scrape the entire bottom of the pot. No rushing this takes time but it’s worth it.

Let the roux darken until it’s about the color of an old copper penny. Or milk chocolate depending on which you are more familiar with.

Once you reach that color turn the heat down to just above low so you have better control of the cooking. Now stir in the veggies. Keep stirring being sure to scrape the bottom of the pot. The mix will get darker thanks to the veggies and is not a sign of burning.

The veggies will begin to get transparent. Cook like this for about ten minutes on low stirring and scraping constantly.

Add stock, rabbit and squirrel pieces, ham, sausage, bacon, tomatoes, pot scrapings from the rabbit and squirrel browning and all seasonings.

Bring to a boil the lower the temperature to a low simmer let cook for about 2 hours maybe a little less depending on your pot and stove.

Test the meat to make sure its done be sure to sir often being sure to scrape the bottom of the pan to prevent burning.

If it looks too thick add water.

Serve with French bread, rice and side of your choice.

Buttermilk Fried Squirrel with Gravy

Ingredients
3-4 skinned and quartered young squirrels.
Buttermilk to marinate overnight.
2 cups all-purpose flour
2 Tablespoons salt
2 Tablespoons black pepper
1 Tablespoon Cajun seasoning
2 cups milk (for the gravy) Again I use buttermilk for the biscuits.

Mix dry ingredients together in zip lock and shake to mix.

Take squirrel pieces from the buttermilk you marinated them in overnight.
Let excess drip off.

Place a few pieces of squirrel in the bag and shake well. Continue until all of the squirrel is coated well. Set the meat to the side on a rack for about ten minutes to let a crust form.

Remember to keep the flour mixture to use some of it to make the gravy later.

Place the meat in a cast iron pan over medium heat in about a half inch of bacon fat. Or I guess you could use the oils they push these days.

Cook about 10 to 15 minutes a side. Slow cooking with a lid makes the squirrel more tender.

Place the meat to the side in a covered warmer.

Pour off all but three tablespoons of oil from the pan. Make sure all of the brown stuck-on bits left from the frying remain. Add in the three tablespoons of reserved seasoned flour and stir well until the flour is lightly browned. Slowly add the milk and continue to stir. Those bits of goodness that were stuck to the pan should loosen and incorporate into the gravy. Stir until the gravy has thickened to the point that it will coat the back of a spoon and tracks remain when you push the spoon across the skillet.

Crock Pot Moose Stew

Ran across this on the web. Looked and sounded good so I thought I would toss it up here for a reference.

1 lb. moose stew meat, trimmed and cut into cubes (or Beef)
3 tbsp. oil
1 med. onion, chopped
1 soup can water
1 tsp. smoked paprika
1 clove garlic, crushed
4 medium potatoes, diced
1 C carrots, sliced
1 can tomato soup
2 tsp Worcestershire sauce
1 tsp. basil
1 tsp. pepper
1 tsp salt
1 C frozen peas

In a large skillet, heat the oil over medium high heat. Brown the meat on all sides and place in crock pot. In a bowl mix together the tomato soup, water, Worcestershire sauce, basil, salt and pepper. Add potatoes, carrots and peas to the crock pot and stir to combine. Pour tomato soup mixture over all, in crock pot, and cook on low for 6-8 hrs.

Personally I think I would add corn, peas and a flour thickener to it. Knowing me it would also have some Bacon.

Roasted Woodchuck (Groundhog)

1. Clean removing the scent glands from small of back and upper forearm areas.
2. Soak in preferred soak if so desired.
3. Bacon everything tastes better with Bacon right?
4. Potatoes, carrots, onions, corn and peas or green beans optional.
5. A couple of onions or apple and onion.
6. Salt and pepper to your taste.

Soak if desired.

Place in roaster.

Put onions or apple onion combo inside chest area.

Place bacon over woodchuck to your taste.

Put the veggies around the woodchuck.

Add about four (4) cups of water.

Place in 350 degree oven and roast for 3 to 4 hours.

Woodchuck Stew

1 woodchuck
2 onions, sliced
1/2 cup celery, sliced
Flour
Vinegar and water
Salt and pepper
Cloves

1. Clean woodchuck; remove glands; about nine along back and under armpits.
2. Cut into serving sized pieces.
3. Optional soak with your favorite soak. Old folks used to use a salt water or a half water half vinegar soak in my area.
4. Parboil 20 minutes, drain, and cover with fresh boiling water.
5. Add veggies.
6. Cook until tender, thicken with flour.

Major sections of the Patriot Act expired on June 1, 2015, in line with the public sentiment. Yet Congress moves to revive the mass surveillance powers.
On Tuesday, June 2, 2015, 67 US Senators voted to give the government back its legislative justification for executing mass surveillance on the phone calls of all Americans.
Each member of the Senate who voted for the USA Freedom Act will now be on record for re-instating—with full knowledge of its illegal usage—a piece of the largest scale violation of the US Constitution in America’s history. They will carry that failure into the next elections, and through the rest of their political careers.
“The public wants a complete end to mass suspicionless surveillance, not more government deception and doublespeak,” said Evan Greer, campaign director of Fight for the Future, “Sunsetting the Patriot Act was a step toward the major structural changes we need to restore privacy, and now Congress is taking a giant leap in the wrong direction with the USA Freedom Act, which revives one of the most badly abused pieces of legislation in U.S. history. I don’t know how many have noticed the availability of this feature.

For $9.99 a month it gives you access to around 700,000 books. It works like a lending library you may have 10 books on your reader at a time from Kindle Unlimited. If you want a 11th book it will pop up and ask if you wish to return your oldest Unlimited book or give you the option to select another book to return.

Being a rabid reader I find this to be a lot cheaper then buying books from Kindle and then realizing they are crap. This way I can try before I buy just as I do with the local library. Or if I’m researching something I can get it and use the reference as long as I wish.

Cheap Rifle for The Homestead.

From what I’ve been seeing on the web most of the people are recommending 2,000 dollar or more AR’s or Augs to the folks who ask this question.

To me that is over kill if all you need it for is to stop a coon from stealing chickens or digging in the trash. Or even up to wild dogs and coyotes that try to attack your herds.

I’ve found the Hi Point Carbines to be excellent for this use and for general around the place needs. They come in 9mm, 40SW, and 45 ACP. All pistol cartridges true but plenty powerful enough to do the job at under 50 meters. I have had a 995TS for over a year now after using it around the place and running a few thousand round through it I’m convinced it is a nice handy and dependable carbine for close work.

A really nice thing about these carbines is that Hi Point has a lifetime no questions asked warranty on them. Even if it’s one you picked up at swap meet or a yard sale. They will fix it for you.

So if you are thinking about getting a light carbine for around the home stock protection, I would highly recommend the Hi Point in you favorite caliber.

Slow Cooker Venison BBQ

Barnes Bullets put this in their monthly Bullet-N For August.

Slow Cooker Venison BBQ

Ingredients:
•1 medium onion
•4 cloves garlic
•3 pounds cubed venison
•1 cup red wine vinegar
•1/2 cup Worcestershire sauce
•2 teaspoons tenderizing salt
•2 teaspoons seasoned salt
•1 pound bacon strips
•2 cups ketchup
•1/2 cup molasses
•1/2 cup brown sugar

Directions:
Dice onion and mince garlic.

In 5- or 6-quart slow cooker, place onion, garlic, venison, red wine vinegar, Worcestershire sauce, tenderizing salt and seasoned salt. Cover and cook on high for 1 to 2 hours.

Meanwhile, in large skillet over medium-high heat, cook bacon strips until tender but not crispy. Remove bacon from skillet and chop into 1/2-inch pieces. After 1 or 2 hours, add bacon, ketchup, molasses and brown sugar to slow cooker. Cover and cook on low for an additional 8 to 9 hours.

To serve, stir ingredients in slow cooker and transfer to serving plates. Serve with rice, potatoes or toast. Yields 6 servings.
