2 Cups of New Orleans Molasses.
1/2 Cup of Sugar. The Juice of 2 Lemons. 3 Eggs. 2 Tablespoonfuls of Flour. 1/2 Teaspoonful Each of Nutmeg and Cinnamon. 2 Tablespoonfuls of Butter. Blend the lemon juice and molasses well, and gradually beat in the flour, which has been well moistened with a little water. Then add the spices and the butter, melted, and the yolks of the eggs, beaten very light with the sugar. Finally, add the whites, beaten to a stiff froth. Mix well. Line the pie pans with a pie crust (see recipe), bake, fill with the mixture, and bake again for half an hour. Onequarter of a cup of vinegar may be substituted for the lemon juice, but always use the latter if you have it.
