6 tablespoons canola oil
1 tablespoon chili powder
1 teaspoon white pepper (optional)
6 medium flour tortillas
6 ground beef patties (1/2 lb. each)
2 cups sliced red, green, and yellow peppers
6 leaves lettuce
1 large tomato, sliced
6 slices cheddar or pepper jack cheese
Heat a large frying pan or outdoor grill.
Mix oil and spices in a small dish. Brush one side of each tortilla with oil mixture.
Saute or grill each tortilla until slightly crisp but not hard, about 30 seconds each side.
Cook or grill patties, cut them in half, and set aside.
Saute or grill sliced peppers until just cooked, not limp.
TO ASSEMBLE BURGER:
Place 2 halves of burger lengthwise down the center of a tortilla. Add some peppers, lettuce, tomato, and cheese over top. Fold tortilla in half to form a giant taco-looking burger.
Substitute a chicken breast or veggie burger patty for the ground beef.
